Called the World Headquarters of chile pepper research and development, The New Mexico state Chile Pepper Institute released the Las Cruces Chile, and things will never be the same. It is an astounding pepper with a generally blunt Jalapeno shape, with a thick skin and wonderfully spicy flavor. It's one of the best new peppers to come about in a long time, and seeds or fruit are hard to come by. We're very glad to be able to offer it.
